Wolha Gomtang is simmered from pork while keeping the broth clear rather than cloudy. A clear broth shows the ingredients and the prep work as they are. At the table, cheonggeunjang and chili oil let you move the flavour to taste.

    Start with the clear broth on its own.

    Salt & Pepper

    Season with salt and pepper to taste.

    With cheonggeunjang

    Add a layer of jang to the meat and broth.

    There are bar seats set up for solo diners, and one bowl per person completes the meal — so ordering stays simple.

  • A day in Insadong with your parents

    Wolha Gomtang is a clear broth with no heat. It works as a place to sit down mid-walk through Insadong.

  • Korean food with visiting friends

    Few ingredients, so it is one of the easier Korean dishes to explain to a first-timer. If they want heat, there is Hong Gomtang.

  • Eating with children

    We keep a high chair on hand, and the clear broth is easy to share with a child.
